The main focus of this position was to assist Kitchen Manager in managing live cooking in all kitchen sections and ensures 100% compliance of recipe methods as defined in controlled recipes. The key performance indicator required to meet the expectation from this position is to supervise all activities of live cooking in such a manner that each load should be of standard quality, taste, fresh and hot in all kitchen sections at all the times.
· Maintain all Kitchen records on time according to their retention periods.
· Participate in estimating of total expected customers figure required for the preparation of next day demand.
· Send approve Demand to Store for issuance of items for the next day.
· Participate in checking process of raw material issued from Store.
· Monitor good level of hygiene practice among all kitchen staff through walk-around the floor during operation.
· Conduct frequent snap checks to monitor food preparation at different stages i.e. food quality and appearance in order to maintain uniform taste throughout operation time.
· *Physically check & taste the readiness of each cook before prime time operation in order to ensure that every cook is well prepared by demand and equipped with necessary items required.
· Assist in preparation of multiple kitchen documents.
· Participate in taking of balance cooked food and its disposal at closing and fill appropriate records accordingly.
· Supervise waste disposal and cleaning of used utensils, kitchen area and cooking range.
· Prepare all Kitchen areas for fumigation on weekly basis.
Meet customers in the absence of Senior Management in case of any query or complaint regarding food
