- A captain should be experienced in seating, greeting, cocktail preparation and service, juice serving and sales.
A captain has to be able to explain the menu! Capable to write fast and legible
- Pay attention to guest orders, and know the menu thoroughly
Communicate with the kitchen regarding menu questions, the length of wait, record keepers, and product availability
If the order has not been sent up by this time, a call must be placed to the guest to apologies and re-evaluated the delivery time.
Responsible for taking guests orders, keeping them organized and timing of course of service for guests.
Responsible to make sure that you are not just an order taker, but that you are well versed in products so you can guide your guests with experience and sell.
Report cleanliness and maintenance issues to the immediate supervisor / Manager
