Deputy Manager Bakery Operations

This role involves overseeing daily bakery production to ensure alignment with sales forecasts and customer demands. The incumbent will be responsible for maintaining consistent product quality, including taste, texture, weight, and freshness, while ensuring timely order fulfillment. A strong focus on food safety, hygiene, and sanitation is essential, adhering to HACCP, GMP, and company standard operating procedures. The position requires close monitoring of raw material usage, production costs, yields, and waste to enhance profitability. Collaboration with procurement, warehouse, quality assurance, sales, and distribution teams is vital to streamline operations and maintain inventory control. Supervising production staff, managing shifts, and driving team productivity are key aspects of the role. Additionally, the candidate will ensure proper use and maintenance of bakery equipment, track production KPIs, prepare reports, and lead continuous improvement initiatives. Supporting new product development, recipe standardization, and process optimization will also be part of the responsibilities. Addressing production challenges, quality deviations, and customer complaints through effective corrective and preventive actions is expected.

Key Responsibilities

- Plan, manage, and monitor daily bakery production to meet sales forecasts and customer requirements.
- Ensure consistent product quality, including taste, texture, weight, freshness, and timely order fulfillment.
- Maintain food safety, hygiene, sanitation, and quality standards in compliance with HACCP, GMP, and company SOPs.
- Monitor raw material consumption, production costs, yields, and wastage to improve profitability.
- Coordinate with procurement, warehouse, quality assurance, sales, and distribution teams to ensure smooth operations.
- Manage inventory levels, material availability, expiry control, and implement FIFO/FEFO practices.
- Supervise production staff by allocating responsibilities, managing shifts, and enhancing team productivity.
- Ensure proper utilization, maintenance, and safe operation of bakery equipment and machinery.
- Monitor production KPIs, prepare operational reports, and drive continuous improvement initiatives.
- Support new product development, recipe standardization, production trials, and process optimization.
- Address production issues, quality deviations, and customer complaints through effective corrective and preventive actions.

Required Qualifications

- Bachelor’s Degree or Diploma in Food Science, Food Technology, Bakery & Confectionery, Baking Technology, or a related discipline.
- Proficiency in MS Office and experience with production or inventory management systems.

Experience

- 5 to 8 years of relevant experience in commercial bakery operations, industrial bakeries, or food manufacturing.
- Strong knowledge of bakery products such as bread, buns, cakes, pastries, cookies, and related items.
- Practical understanding of production planning, quality assurance, food safety, inventory control, and cost management.
- Proven experience in supervising production teams and managing day-to-day bakery operations.
- Demonstrated leadership, analytical, communication, and problem-solving skills.
