The Shift Manager is responsible for overseeing daily restaurant operations during assigned shifts, ensuring high standards of food quality, guest satisfaction, employee safety, and profitability. Serving as the crucial link between line staff and senior management, this role drives efficient shift execution, optimizes labor utilization, and enforces strict compliance with food safety regulations. The Shift Manager maintains smooth floor operations, manages customer interactions, and safeguards the restaurant’s financial performance.

Key Responsibilities

Shift Operations & Floor Leadership:
Lead opening, mid-day, or closing shifts in accordance with brand standards. Conduct pre-shift briefings to communicate daily sales targets, promotional items, and station assignments. Manage floor flow during peak periods such as lunch and dinner rushes to ensure timely service and product accuracy. Oversee station setups, line checks, and cleanliness across both Front-of-House (FOH) and Back-of-House (BOH) areas.

Food Safety, Sanitation & Quality Control:
Ensure strict adherence to food safety protocols, including HACCP principles and local Food Authority regulations. Perform regular temperature checks on food holding units, chillers, and line equipment. Promote personal hygiene, handwashing routines, uniform standards, and clean-as-you-go practices among all shift personnel. Manage food rotation using FIFO (First In, First Out) to maintain freshness and minimize waste.

Customer Service & Guest Recovery:
Maintain a visible managerial presence in dining and counter areas to engage guests and gather feedback. Address guest inquiries and resolve complaints promptly using the LAST method (Listen, Apologize, Solve, Thank). Ensure accurate and efficient fulfillment of dine-in, takeaway, and third-party delivery orders.

Financial & Inventory Control:
Monitor labor costs during shifts and make strategic adjustments such as staff reassignments or reductions when customer volume is below forecast. Perform safe cash handling duties including register audits, mid-shift cash drops, till balancing, and end-of-shift reconciliation. Track raw material usage, kitchen waste logs, and voided orders to protect profit margins. Oversee stock receiving, verifying item quality, temperature, and quantity against delivery invoices.

Key Performance Indicators (KPIs):
- Speed of Service (SOS): Meet or exceed target ticket times during peak hours.
- Food Safety Compliance: Maintain 100% pass rates on internal and health authority audits.
- Labor & Waste Variance: Keep labor costs and waste within budgeted limits.

Required Qualifications
- Minimum one year of experience in the food industry.
- Proven ability to supervise team members effectively during shifts.
- Strong knowledge of food safety standards and operational procedures.
- Ability to manage customer service and resolve complaints professionally.
- Experience with cash handling and inventory control processes.

Preferred Qualifications and Benefits
- Willingness to commute or relocate to Karachi Clifton preferred; relocation package available.
- Monthly salary range: Rs50,000 to Rs55,000.
- Work location: On-site at the restaurant.
