The Tandoorchi plays a vital role in the kitchen by preparing and cooking a variety of tandoor-based food items while ensuring quality, taste, and hygiene standards are consistently met. This position involves the efficient operation and maintenance of the tandoor, timely preparation of meals, and close coordination with kitchen staff to support smooth service, especially during peak hours. The Tandoorchi must handle fuel safely, manage stock economically, and maintain cleanliness in the work area to uphold food safety and operational efficiency.
Key Responsibilities
- Operation of Tandoor: Efficiently operate the tandoor, maintaining the appropriate temperature for cooking various food items.
- Preparation of Tandoor Items: Prepare and bake naan, roti, chapati, kulcha, paratha, and other menu-specific tandoor items with consistency and quality.
- Preparation of Tandoori Dishes: Cook tandoori chicken, tikka, kebabs, and other assigned tandoor-based dishes following prescribed recipes.
- Dough Preparation: Prepare, knead, and portion dough accurately to ensure uniform size and quality.
- Quality Control: Ensure all tandoor items are cooked thoroughly, fresh, hygienic, and meet established taste and presentation standards.
- Timely Production: Manage production volumes to meet diner requirements and meal schedules, particularly during busy periods.
- Hygiene and Sanitation: Maintain cleanliness of the tandoor area, utensils, equipment, and working surfaces in compliance with hygiene standards.
- Tandoor Maintenance: Regularly clean and maintain the tandoor, reporting any defects or maintenance needs promptly to the supervisor.
- Safe Handling of Fuel: Handle coal, gas, or other fuels safely and ensure their efficient and economical use.
- Stock Management: Use flour, ingredients, and consumables judiciously and notify the supervisor about shortages or replenishment needs.
- Kitchen Coordination: Work collaboratively with the Chef, Mess Supervisor, and kitchen staff to ensure timely meal preparation and service.
- Special Functions: Provide tandoor services during official functions, dinners, special events, and other occasions as directed.
- Compliance with Instructions: Adhere strictly to approved menus, recipes, portion sizes, food safety protocols, and instructions from the Mess Supervisor or Chef.
- Additional Duties: Perform any other food preparation or kitchen-related tasks assigned by the competent authority.
Required Qualifications
- Minimum educational qualification of 8th class (middle pass) is essential.
Preferred Qualifications
- Matriculation is desirable.
Experience
- At least 1 year of relevant experience is essential.
- 2 years of experience is preferred.
