  • Supervise kitchen operation
  • Make Staff duty Roster
  • Give instructions to cook for.
  • Check Raw material availability
  • Handle food properly to avoid food wastage.
  • Ensure food safety and hygiene in kitchen
  • Give daily demand to store as per stock available in kitchen.
  •  Coordinate with store for emergency and short demand.
  •  Keep food cost under control
  • Make staff vacation planner
  • Ensure that operations runs smoothly, and ensure on daily basis that resources like staff, Raw material availability remains sufficient to deliver LalQila guests better food quality.
  • Make Monthly Buffet Menu for Lunch and dinner in joint meeting with Management (CEO, RM, and Store) and give masala order to store.
  • Make sure that cooks follow LalQila Recipes procedure and masala.
  • Finalize staff attendance, and coordinate with RM and HR for staff disciplinary issues, staff Relocation & vacations.
  • Perform daily checks
  • Check fridge temp
  • Check staff hygiene
  • Check equipment
  • Check food date labels
  • Check gas availability
  •  Check maintainace issues
  • Check proper food and nonfood items storage
  • Random check Raw material (fruit, vegetable, Meat and other raw material)
  • Check Kitchen Cleaning & utensils and equipment condition
  • Give instructions to cleaners to maintain cleaning and hygiene.
  • Perform random food tasting of food served on buffet and food cooked inside kitchen do adjustment and give cooks instructions for better taste to be served to customers.
  • Purchase utensils and buffet items on need basis and renovate.
  • Work on food display on buffet and innovate buffet dishes and presentation to improve buffet look.
  • Give instructions to Abudhabi branch chef to follow that above instructions
  • Perform Abudhabi random visits and check the SOPs are followed in branch. And food taste is satisfactory.
  • Facilitate KHI team audit and work and resolve their findings, coordinate with LalQila kHI GM and chef for Recipes, SOPs related queries.
