• Manage kitchen operations between existing stores and any new locations that opens.
  • Outline overall requirements of kitchen based on menu items to be made - equipment, utensils, raw materials.
  • Definition of menu - hot/cold drinks, food options that will be served.
  • Conduct trials of recipes for the final menu based on their taste and presentation.
  • Branding of cups and napkins based on drinks menu. Their sourcing, transport and forecast calculation of usage.
  • Pricing of menu after research/benchmarking in relation of company's strategy.
  • Training of barista and staff on preparation, order taking, billing, upselling, customer service and hygiene compliance.
  • Train kitchen staff on efficiency for delivering orders within a certain time frame.
  • Selection and sourcing of materials that will be used in the recipes.
  • Coordination and management of vendors for raw materials
  • Engage customers and encourage them to provide feedback to ensure sustainable and consistent experience.
  • Provide forecasts and budgets to monitor & control wastages at all operational sites and ensure profit maximization.
  • Introduction of new special items on the menu to create excitement based on demand and change in weather
  • Management of recipes entered in ERP system.
  • Analyze sales report to strategies selling of menu items
  • Ensure that all financial targets are being achieved, through purchasing efficiencies including coordinating with vendors and supply ordering.
  • Ensure that all menus are correctly calculated to ensure maximum gross profit
  • Introduction of quality daily staff food for the company with recipes that follow within a specific budget.
  • Maintaining separate costing and addition of recipes in ERP for staff food.
  • Work closely with the chef to create quality food.
  • Introduction of frozen line chain with recipe creation and all processes for a finished product.
  • Sourcing of ingredients for frozen line.
  • Food photography of frozen products, design packaging and source the final printed boxes.
  • Work with warehouse manager for introduction of bakery products line.
  • Have knowledge on how to estimate the amount of food that needs to be ordered and prepared and predict possible fluctuations.
  • Ensure monthly auditing of kitchen
  • Keep tabs on food cost, wastage and employee hours to optimize profits for the company.
